2. What personal data we collect
We collect personal data in the following ways.
When you book a table. Through our booking system (SevenRooms) we collect your name, email address, phone number, party size, requested date and time, and any special requests or dietary information you provide. SevenRooms may also store a record of your past visits and preferences. If your booking requires a deposit or card hold, your payment details are processed by SevenRooms’ payment processor; we do not see or store full card numbers.
When you contact us. If you email us, call us, or fill in a contact form, we collect your name, contact details, and the content of your message.
When you sign up for marketing. If you opt in to receive news or offers, we pass your name and email address to Klaviyo, our email marketing platform.
When you visit the website. Our hosting provider records standard server logs (IP address, browser type, pages visited, referring page, timestamps). With your consent, we also use Google Analytics and similar cookies as described in section 9.
When you visit our premises. We operate CCTV at DÍON for security and safety. See section 10.

4. Legal basis for processing
Under GDPR we rely on the following legal bases:
- Contract. Processing your reservation, including any deposit or card hold, so we can provide the service you have requested.
- Consent. Sending you marketing emails through Klaviyo, and setting non-essential cookies such as Google Analytics. You can withdraw consent at any time.

We may also disclose personal data where we are required to do so by law, court order, or regulatory authority. CCTV footage may be shared with An Garda Síochána or other authorities if requested for the investigation of a crime.
6. International transfers
Some of our service providers are based outside the European Economic Area (EEA), primarily in the United States (SevenRooms, Klaviyo, Mapbox, and the US-based infrastructure used by Google Analytics). Where this is the case, we rely on the European Commission’s Standard Contractual Clauses or equivalent safeguards approved under GDPR to protect your data.

- Server logs and Google Analytics data: retained for up to 14 months.
